Champagne & Sparkling

Sparkling wine is simply wine with carbon dioxide bubbles in it. Sugar and yeast is added to a still Chardonnay or Pinot Noir to encourage a second fermentation.

Sparkling wines can have varying levels of sweetness. Brut (dry), Brut-de-brut (extra dry), Spumante (sweet & fruity)

Sparkling wines may also be made from red wines, known as "Sparkling Burgundy" OR "Sparkling Shiraz".


Fortified

This is a wine to which a grape spirit or brandy has been added to create a rich, full flavoured drink or relatively high alcohol - 18% +.

Traditionally drunk at the end of a meal, the main styles are Fortified Reds (Port), Fortified Whites (Sherry) or Muscat and Tokay (very rich wines).
